Breakfast is not only my favorite meal of the day, but it is also my favorite style of food to cook. On the weekends, I love to treat myself to a hearty breakfast and this German Pancake is one of my go-to’s. It is quick, easy and always satisfies my morning sweet tooth. It is also a great recipe for a crowd if you simply multiply the recipe. Keep reading to find out how to make my favorite fluffy weekend treat!
HERE IS WHAT YOU’LL NEED:
**serves 4
-3 tbsp butter
-1/2 cup oats
-3 eggs
-1/2 cup milk of your choice (I love to use the Trader Joes Lavender Blueberry Almond Milk)
-1/4 cup sugar
-1 tsp vanilla bean paste or vanilla extract
-pinch of salt
-2 bananas (save one for topping)
-1 cup blueberries
Add your butter to a 9x9 baking dish and preheat your oven to 400 degrees. Add your dish to the oven so that the butter can melt while you are preparing the batter.
Add your oats to a blender and pulse until it becomes oat flour.
Add your eggs, milk, sugar, banana, vanilla, and salt to the blender and pulse until combined.
Remove dish with melted butter from oven once it has reach 400 degrees and pour batter into hot dish.
Top batter with your blueberries and sliced banana.
Cook at 400 for 20 ish minutes or until the batter is no longer jiggly in the middle!
