4 Ingredient Banana Muffins
I LOVE to cook. Baking….. not so much. I somehow always mess it up and the exact measurements annoy me. I like to just whip something up and not have to worry about measuring tools. So when it comes to sweet treats, it has to be idiot proof. I have been slaving away in my kitchen trying to perfect some easy, simple, healthy-ish recipes for some time now and I NAILED these banana muffins this past week. They require only 4 ingredients and odds are, you have them in your kitchen as you’re reading this!
You’ll Need:
3-4 ripe bananas
One cup oats
1 teaspoon baking powder
1/2 cup mini chocolate chips or 1 cup blueberries (fresh or frozen)
Preheat your oven to 350 degrees.
Prepare your muffin tins by adding liners and spraying them with coconut oil or any other kind of cooking spray.
Mash your ripe bananas in a medium sized bowl.
Add your cup of oats to a blender and blend until the oats turn into a flour like consistency.
Add your “oat flour” to the mashed banana bowl and add your baking powder.
Mix until well combined and then add in your mini chips or berries and continue stirring.
Pour your batter into the muffin tins. This recipe only makes about 6 large muffins.
Bake for 15-20 minutes but check them at 15! The top should be firm and the insides will have a moist center. It is not meant to have a crumbly “cake-like” texture.
