End Of Summer Pasta Salad

Summer is coming to an end (thank baby jesus) and the only thing I’ll really miss about the warmer months is the fresh produce, specifically peaches. Run, don’t walk to your local farmers market and grab some fresh peaches to make this DELICIOUS pasta salad recipe before they’re no longer in season. This is great for meal prepping and it stays fresh in the fridge for up to 4 days!

Here Is What You’ll Need:

1/2 pound of pasta (I picked up this oversized fusilli from my local Whole Foods)

3 large handfuls of Arugula

1 large peach

1/3 cup thinly sliced red onion

1 cup cherry heirloom tomatoes

1/2 cup sweet corn

1/3 cup crumbled feta cheese (or add as much as you’d like!)

1 lemon

2 tbsp olive oil

Sprinkle of crushed chilli flakes

Garlic salt & Pepper to taste

  1. Cook pasta following the specific instructions.

  2. Once pasta is finished cooking and strained, rinse with cold water and add to large salad bowl.

  3. Combine juice of one lemon, olive oil, and seasonings to create a dressing and toss with cooked pasta.

  4. Add arugula ,corn, chopped peaches, heirloom tomatoes, and sliced red onion to bowl and toss.

  5. Add crumbled feta and toss.

  6. Serve immediately or can be chilled before serving and enjoy!!
